Why does Ctrl+Shift+B open All Bookmarks?
Is there way to make it open Unorganized Bookmarks instead?

Yes, using an extension. There are several extensions out there that let you customize your shortcut keys.Is there way to make it open Unorganized Bookmarks instead?

I solved this by installing dorando keyconfig and adding a key with the code:
PlacesCommandHook.showPlacesOrganizer("UnfiledBookmarks");
PlacesCommandHook.showPlacesOrganizer("UnfiledBookmarks");

Strangely enough, on Linux, the functionality is mapped on Ctrl+Shift+O, while Ctrl+Shift+B "does nothing". And it's vice-versa on Windows.
AFAIK this is a Mozilla-ism since I've experienced the same in the past when I ran Firefox 3.x on Ubuntu 8.04.x
