What reasons are there to choose Waterfox, Pale Moon, et al., over Firefox?
I've never used these forks, but they pique my interest. What are the reasons for using them?

I suggest you take some time reading the Pale Moon website and this forum to inform yourself about Pale Moon, the fact that Waterfox isn't a fork, and the general opinions about Firefox and the different direction and goals we have from it.
