Either:
R-click on the item - Properties - Change Icon
this will take you to some default icons for the programme
or
Same procedure to Change Icon then click on Browse.
I've done the latter procedure on some programmes by looking in the System Icons folder, looking on the web for relevant images and then making .ico files with them (Irvan View will do this), or just making an icon from some picture or drawing.

To change the taskbar icon you basically follow the directions from here https://forum.palemoon.org/viewtopic.php?f=13&t=5124&p=31734&hilit=default.ico#p31704. Instead of the directory for Pale Moon, you will use Program Files\FossaMail\chrome\icons\default\. You might have to clear the Windows icon cache for the icon to "take".
