It is something similar to the "
Do Not Track" settings in all browsers, but cannot be entirely ignored because there is some legislations backing it too, in some parts of the world (for e.g.
California Consumer Privacy Act). (Note that Firefox and Brave already support it, and other browsers can depend on a browser extension like the EFF Privacy Badger to enable it too).
Global Privacy Control (GPC) is a proposed specification designed to allow Internet users to notify businesses of their privacy preferences, such as whether or not they want their personal information to be sold or shared. It consists of a setting or extension in the user’s browser or mobile device and acts as a mechanism that websites can use to indicate they support the specification.

It would be great if PaleMoon also supported it, as it aligns with their values too, and users need it.

Not sure if you actually checked the preferences, but I guess you may have overlooked it if so. See preferences -> privacy -> tab "Tracking" (top option)
We were among the first browsers to support the sec-GPC header and the user's choice to send the signal to not share or sell data.
We've had GPC since
v31.0.0 (2022-05-10)
A note about Do Not Track: it's unenforceable and generally not honored because it has no legal backing. We dropped support for it at the same time as introducing GPC.

I was indeed not aware that "
Tell sites to not share or sell my data" was GPC - I had assumed it was DNT (Do Not Track), and thus had kept it disabled (because, as you pointed it is is functionally useless and just
aids browser fingerprinting when enabled). Perhaps you can make this more explicit by changing the label to "Tell sites not to share or sell my data (
GPC)"?
