I cannot load any add-ons as it states that the add-ons are nor compatible with pale moon 25.7.3.1

I try to disable extension check compatibility and its not there in about:config

Make sure you use versions of your add-ons that are compatible. You can find these on addons.mozilla.org for mobile.

I don't install as many add-ons to my phone as I do my desktop, but I've successfully installed several, including:
  • uBlock Origin
  • Password Exposer
  • DuckDuckGo Integrated search
  • Wikipedia Integrated Search

As mentioned, with some you may need to install an older version. Are there specific ones that you are unable to install?

Many that cannot be installed Adblock, ghostry

I would prefer just to disable extension check compatibility

The problem is that firefox allows addons like ghostery and adblock to be loaded but if you use pale moon it does not.
