Is there any setting I overlooked which blocks images from being displayed in messages? It's actually a bit more complicated than that, because some messages do display fully and correctly, and some do not.
Also, how do I get rid of that "show remote content" button and simply make FM display a message? I couldn't find anything that controls that either.

You can add the sender to the "allow" list, like this:

Uh, that's a little inconvenient. There is no global setting for this?
I replaced my wife's Thunderbird with FM and she's pretty annoyed by it, unfortunately, because of things like this.

Thunderbird have the same feature.
Don't know if the setting does that, by try settings -> security -> phishing (anyway disable is not recommend)

Loading of remote content by default for any sender is a big security and especially privacy risk. This is why you should not have it enabled by default.
The setting to load remote content once (with the button) or always for a specific sender (recommended for trusted senders or what you subscribe to, yourself) is as good of a compromise there is without exposing yourself to this risk.
Why is this a risk? Simply put: if e.g. a spammer sends you an e-mail and it is displayed with remote content enabled, then the spammer knows exactly that the mail was opened, when it was opened, and where (your IP will be known), with whatever additional information would be included in that request (they can e.g. add a code to automatically know the e-mail address it was sent to, confirming that someone is actually reading these mails so be a target for more spam).
To globally enable the display of remote images at all times, you can set mailnews.message_display.disable_remote_image to false in Tools -> Options -> Advanced -> tab general -> button Config Editor. Once again, this is not recommended.
Another alternative (but more inconvenient) would be to use the Config editor to create a mail.trusteddomains setting that specifies for what e-mail domains it should automatically display remote images. This is much easier than having to specify each email address, but you're taking the risk that you get any messages with a spoofed From: header in one of those domains to display remote content as well, so a potential risk there but good for very specific domains that you receive e-mail from from many different addresses (so don't use it for gmail.com or hotmail.com or similar). The setting contains a list of domains separated by commas, with no wild cards, white space or subdomains allowed.

Just to add a suggestion:
My solution has been to create a specific address book for lists and other contacts from whom I want to accept images. That way, I can accept images from trusted correspondents (ex.: colleagues, family, etc.), but also from distribution lists that I trust. And the latter doesn't pollute my real address book.

The images are kinda weird though, sometimes and email that should have them have none at all and there is no indication that anything was blocked.
