You can download the 10.0.3 version of TT DeepDark (compatible with TT 38.0-41.*, should be compatible since Fossamail 27.0 is mostly function-wise compatible with TT 38.0), extract install.rdf from it and change the minVersion to 27.0 (which is the version of Fossamail), update the install.rdf in xpi and you can then install it.

How would you even extract and repackage an xpi?

by changing the extension from .xpi to .rar or .zip

or just use the Open With option in the context menu to open it with your file archiver util
