To downgrade, do I uninstall the new one first?
I unexpectedly lost access to essential addons that I use Palemoon for (they are not available for other platforms), so I need to go back.
Do I install the old one over the new one, or do I uninstall the new one first?

Well, I think you are kind of screwed if you didn't backup your profile. What extensions do you use? Did you bother checking if they have already been forked for Pale Moon?

My particular favourite oldtimer is Hacktheweb, to isolate content from junk instantly.

It is related, but not close enough.
I delete unnecessary parts, or isolate necessary parts discarding the rest, and then save to MAFF for reference, a lot.
E.g. research papers are much better to read as MAFF aka html than pdf, and it's easy to add various markup into html.

What he linked to lets you modify a page on the fly and save the result as a script for Stylish.
