Yes try disabling those last two (and malwarebytes antimalware if it uses real time protection ) and maybe restart and try it.

Aha! You've got it tenseys!
It appears Malwarebytes Anti-Ransomware is the problem - its a beta program and I didn't realize ESET has ransomware protection too, so maybe I don't really need it. Very odd that my wife's laptop has the exact same version of Malwarebytes Anti-Ransomware and her PM prefs.js is saving just fine - maybe it behaves a bit differently on Win 7?
Anyway, I do believe we've fixed this annoyance - many thanks to all who helped - and a Merry Christmas too!

Great! Glad you got it fixed. Yeah I don't think you need both of them running in terms of ransomware protection (maybe they could conflict? don't know). You are probably good to go with just letting eset handle all antivirus/antimalware/ransomware+ duties and keeping MBAM on the side, realtime protection disabled, for occasional on demand double check scans. Regarding the other computer...different OS, different configurations etc... Merry Christmas to you too!

I think you can add exceptions to MB Anti-Ransomware to possibly stop it from messing with PM but then perhaps it won't scan PM for Ransomware issues. Maybe its some other issue with it though. Windows Defender doesn't let me install it - states it conflicts. But again, I think you should be fine with eset solo.
Don't forget to reenable HIPS in eset if you haven't done so yet.

Yes, I added the prefs.js file to the Exclusions list - I think that'll do it, although I may just remove MB Anti-Ransomware altogether.
