If you use the search plugin, you can use the search bar's dropdown menu to switch engine.
It's a bit tedious, but it uses the browser's UI instead of quirks of a specific engine.

I had no problem with PayPal; in fact, I just made a payment like two days ago through it.
I'm using the native user agent (i.e. without any Firefox or Gecko strings) and had no problem.

Unfortunately for you the first thing you have to do is trim your extensions, as back2themoon said.
Start by removing NoScript and clearing the cache, etc. Then move to extensions installed through Classic Add-on Archive.

Have you restarted the computer after uninstalling stuff?
Alternatively, do another clean install of Windows but this time don't install antivirus software. Of course only if you can and want to; the solution is probably simpler but this would eliminate some of the possible problems.

I can click on various elements and navigate to a different page, however if I try to select one of the headlines nothing happens.
Hovering over them shows an animation in which all text and images disappears and clicking on them does nothing.

Just to make sure, if you try to upload files using mouse clicks (click on button, select file from dialog window, click upload) does it work? Assuming you can do that, that is.
