It's disappeared off the menu list at the top of the page. Now the only way I can access it is to google "Pale Moon Addons".

From the main Pale Moon website, it's easily accessible via Main > Pale Moon add-ons site.

Ah, so what you SHOULD have said is that it has been REPLACED on some pages. The Extensions link still exists as a top-level link on the actual addons pages, but has now been replaced by
Main -> Pale Moon Addons
On the main palemoon page
Instead of the top level link that just said EXTENSIONS.
It's easily accessed - once you know where it went, LOL!

The current menu structure on the website has been like this for a very long time... and has never had "extensions" at the top level.

Now that there is a Pale Moon add-ons web page, could I suggest that you add a link to it in the main Pale Moon page, such as when you write about the growing collection of extensions and themes.
